Our story

Hi, I’m Matt Eddolls,
With 10 years experience working in a variety of establishments from Fine Dining Gastro Pubs to 2 AA Rosette Hotels and everything in-between.

Working in some amazing kitchens including The Hare & Hounds, Westonbirt, The White Horse, Compton Bassett and The Royal Oak, South Cerney.

Becoming Head Chef at the The Wheatsheaf Inn, Oaksey is where I was given the opportunity to create a unique fine dining experience and develop my own culinary approach to creative dishes.

The Countryman Chef was born from my passion to construct my own menus, evolve my ideas and work with my clients to design something truly bespoke.

From the moment I got in contact with Matt he was nothing but great in helping me arrange a dinner party for my dads 60th. He went over and above his duty and even before meeting him I knew he was going to make our evening. Matt and his partner were so friendly and kind that it was a pleasure sharing our evening with them.
Then Matt served his food……wow!!! I have never tasted anything like it. There were empty plates all around on all 3 courses. The value for what her served and the service he provided was incredible. He also left the kitchen cleaner than before he arrived!!!

I cannot recommend Matt enough and will 100% see him again we return on future holidays.
